An Elevated Experience Awaits

The month of July is known nationally as a month of recognition for the culinary arts. As the Innovative Foodservice Group, and our many supporting branches, we are honored to work with several brands that offer exceptional products that upscale any presentation. While it is most important that what is being served is strong and positive in taste, how that food is presented determines the effect of that first impression on your customers. We asked some of our vendors why presentation is so important in the foodservice industry, here is what Libbey had to say.

Did you know that about 60-65% of those who drink wine are drinking out of the incorrect glass?

While the choice of glass may seem like an afterthought to some, whether a restaurant ordered bulk of whatever glass was in stock, you grabbed the first glass on the shelf at home, or simply poured the wine into any cup that was available, the incorrect glassware negatively impacts the wine experience both in taste and smell. Good glassware provides a various number of functions and tasks for various wines. The correct glass with the correct bowl shape will capture the aromas and flavors of the wine exceptionally better than if in an incorrect glass shape. Overall, the correct glassware will enhance the experience for your customers.

For the correct glassware, the shape of the bowl is critical. This is where the wine is settled. Wider bowls allow for proper swirling which releases aromas and compounds. The larger the bowl the more surface area the wine compounds can be released. Never fill a glass with more than a third of the total height of the bowl to have the proper amount of room for swirling.

It is also highly important to recognize that the base is correct for the size of your glassware. The larger the base means more stability for the glass, making sure it won’t tip over.

The stem on your glassware is also important. The stem serves two distinct purposes: it allows the customer to hold the glass without touching the bowl and risk changing the wine’s temperature and keeps the hand away from the rim of the glass. Hands on the rim can risk masking the aromas of the wine with lotions, perfumes, or any other type of scents that might be transferred.
